On vSwitch2 I set the MTU to 9000 via the hosts GUI. But should I also set the MTU for vSwitch 0 & 1 to 9000 from the defualt of 1500?
I would recommend moving the Vmotion from the management switch and given a separate switch. Also, from the vsphere docs "Use of Jumbo Frames is recommended for best vMotion performance."

Also, configuring management network in jumbo frames might not fully be utilized since the only areas where such much requirement would be in case of HA or FDM.
The Vswitches and vNIC's are setup as follows:
vSwitch0: VNIC's 0 & 1 for manamgent and Vmotion
vSwitch1: Virtual Machine Port Group VNIC's 2 & 3
vSwitch2: vMkernal Port for iSCSI conenctions VNIC's 6 & 7
