if the CPU families are too different then we need to use EVC else no need, just compare the 2 CPU in the intel/amd site.
in new infra
First install esxi
take one ports from each HBA card, and connect to the OLD SAN and other ports to NEW SAN
now expost the OLD LUNS to the new ESXI
remove the old ESXi hosts from the cluster
now ADD the new esxi to the OLD vcenter
now do the vmotion from the old esxi to new esxi
once vms moved to new esxi, then remove from the old vecenter
now add the new esxi to the new vcenter (if you are not using a new vcenter then no need to do this task)
then do the svmotion to the new san
switch also you can put your new switch in place of the old and one of the esxi uplinks must be spread across the old/new switch.
it is tough to do with out down time... this is my idea... may be better idea will be there
