These "Virtual Disk-s00x.vmdk" files are so called 2GB sparse files, which make up the virtual machines disk. Each of these files can grow up to a maximum size of ~2GB. A VM with e.g. a 40GB virtual disk will have 21 of these files (User data plus Metadata).
However, files with "00000x" in their file names are snapshots files, which are either created manually or by the "Autoprotect" feature. If you don't want/need Autoprotect, you may disable it in the VM's settings to avoid the creation of these snapshots.
