Thanks for the tip that got me going, here is how it played out:
I installed on a USB and went back to getting no boot device found errors. After a little reasurch I found you can add a boot option (formatwithmbr) to install on an MBR rather than a GPT partition. Now, while my BIOS supports UEFI boot I tried this. This didn't work on the flash drive but I tried it on the local disk, disabling UEFI boot and setting the controler to AHCI mode. This allowed me to boot and begin managing normally.
